Found at Dans Supermarket! The best thing I’ve ever eaten. It’s a croissant and doughnut in one. (Not a Cronut. I’m honestly not a big fan.) It’s soft and chewy in the center and flaky with sweet icing on the outside. And heated up, Oh. My. Gosh! This splurge is absolutely worth it. Remember make your splurges count!

Cauliflower rice with Lime and Cilantro

Have you heard about cauliflower rice? Well, it’s all the rage and I have not been able to find it at my Trader Joe’s so I made my own. INGREDIENTS: One bag cauliflower florets (Costco) EVOO Lime juice and zest Cilantro, chopped S&P METHOD: In a blender or Cuisinart pulse cauliflower until rice size (don’t blend to paste). Working in batches works much better then all at once. Sauté with EVOO until warmed through. Add lime juice, zest, cilantro, and S&P.

Sriracha Salt and Costume

As you probably know by now, I’m obsessed with Sriracha anything but especially Sriracha salt. The great news is you can make your own at home! Ingredients: 1/2 C kosher salt 5 tsp Sriracha Method: Mix salt and Sriracha until completely combined. Preheat the oven to 350°F. Spread the Sriracha salt out thinly on a baking sheet lined with parchment paper. Put the baking sheet in the oven and turn off the heat immediately. Allow the salt to sit in the residual heat until completely dry. The drying time can vary greatly but it usually ranges from 2 to 3 hours. Store in air tight container. ETC. Savory Polenta Oatmeal

Trust me! Ingreients: Steel cut oats Prepared Polenta (sold in logs at most grocery stores) Parmesan cheese Sharp cheddar cheese Poached or Fried egg S&P Method: Make oatmeal according to directions and add a couple of spoonfuls of polenta and mix through. The Story of the Poached Egg

Last week was filled with parties and good food, friends and dancing. It was non-stop action and I loved every minute. But when I look back on my favorite moment, it was a quiet conversation with Linda. We’ve met a few times and as we chatted she told me that I had changed her 90 year old mothers life. Shocked, I asked how. Linda’s mother is blind due to Macular Degeneration and Diabetes. She lives alone and still cooks for herself, amazingly. Her favorite food in the entire world is poached eggs. Once she became blind, she could no longer boil water in order to make her favorite eggs. The moment Linda read my post on poached eggs done in the microwave she called her mom, who lives out of state, and told her about this discovery. Every day since, this dear woman has been able to cook her favorite food again and enjoy this simple but special treat. It’s stories like this that touch my heart and make me grateful for tender mercies. Happy Sunday!

Lemon, Tomato, and Artichoke Halibut

Adding more fish to your dinner time repertoire is always a good idea! There are so many awesome flavors in this rich lemony sauce.   Halibut, or your favorite white fish 1 lemon, juiced and zested 2/3 C dry white wine 1/2 C butter 1 TB garlic Grape Tomatoes Parsley, chopped Artichoke hearts in oil and drained Capers, drained S&P Grill or Traeger your fish with a little EVOO and S&P. Don’t overcook. Blister tomatoes in a little EVOO. Add garlic and sauté on medium-low heat. Add artichoke hearts and cook through. Add butter then wine, lemon juice, and cook on medium- high for 10 minutes or so. Add parsley and lemon zest at the end. Cover fish in sauce and serve warm!

Breakfast Sandwich with Avocado and Egg

Is there such thing as a hangover if you don’t drink? If so, 🙋🏼. Exercise and this breakfast sandwich should get me through a day of Halloween parties. Your favorite bread Spinach, chopped Eggs, over easy Avocado, smashed Dressing for spinach- Lemon juice EVOO S&P Top with Sriracha salt ETC. The last thing I wanted to do when I woke up this morning was exercise. I put my workout clothes on and committed to 10 minutes. 40 minutes later, I was so happy I had started. Endorphins work wonders! (PS- this is great carb free without the bread)
