I am SO excited to share all of my 4th of July recipes with you this week! They are not the Pinterest ones you see everywhere but new and fun ways to celebrate the US of A! Use Endive or slices of a Baguette Layer: Goat cheese Strawberries, chopped Basil, julienned Balsamic reduction Pistachios, chopped Dash of Ground Pepper ETC. Tonight I’m serving the toppings over greens and a chicken breast for dinner. Use the endive. It’s low carb and has a great crunch!

What’s more American then Fried chicken and Waffles? Quarter your favorite waffles. Eggo Thick and Fluffy would work as well. Stack on pieces of your favorite Fried Chicken. (KFC, your groceries deli, Chick-Fil-A) Add a ring of jarred jalapeño. Serve with a Maple Syrup dipping sauce!

So naughty. So worth it! In an oven safe dish layer (next to each other) Terra potato chips Blue Corn Tortilla chips Sprinkle- Blue Cheese Green onions Sliced Bacon, crumbled (I picked up a scoop from our grocery store salad bar) Dash of Ground pepper Drizzle balsamic glaze Bake or Traeger on high (450) until bubbling and you can’t wait one more minute!! ETC. For non red white and blue holidays use Kettle Chips or your favorite chip.

I think you could say we’re ready for the 4th!! Use thick cut bacon Mix in a bowl of brown sugar and lay out on a cookie sheet. Drizzle maple syrup and sprinkle pepper and cayenne. Traeger or grill until crispy. You can also cook in the oven but I would recommend on the grill!!

I’m excited about these leftovers today! The Tahoe Brunch casserole is delicious but has a whopping 46g of fat per serving. With this lightened up version you can feel better about serving this to your family. Original Recipe- 12 slices white bread, crusts removed 2-3 tbsp. butter, softened 1/2 c. butter 1/2 lb. fresh mushrooms, sliced 2 c. thinly sliced yellow onions 1 1/2 lb. mild Italian sausage 1 lb. cheddar cheese, grated 5 eggs 2 1/2 c. milk 1 tsp. dry mustard 1 tsp. nutmeg 2 tbsp. fresh parsley 2 C tomatoes, diced Butter bread with softened butter; set aside. In a 10-12 inch skillet melt 1/2 cup butter and brown mushrooms and onions until tender. Season to taste with salt and pepper. Set aside. Cook sausage and cut into bite size pieces. In greased shallow casserole layer 1/2 bread then mushroom mixture, sausage, and then cheese. Repeat ending with cheese. In medium sized bowl mix eggs, milk, mustard, nutmeg, and 1 teaspoon salt and 1/8 teaspoon pepper. Hand beat. Pour over casserole. Cover and refrigerate overnight. Sprinkle parsley…
