Oven Fried Chicken Salad with Homemade Honey Mustard Dressing was 😍 and took 20 minutes to make. Plus we ate the leftover chicken over pasta tonight (and I’ve been dipping them in ranch as I clean up dinner 😊. Chicken tenders Milk or buttermilk Eggs Corn Flakes, crushed Seasoned salt and pepper Garlic powder Cayenne SALAD FIXINGS: Arugula and Romaine lettuce Avocado Frozen corn, charred in sauté pan Cherry Tomatoes Sliced red onion (marinated in dressing) Red Leicester cheese with chili and red pepper, chunked (TJs) HONEY MUSTARD DRESSING: Equal parts: Dijon mustard, honey, EVOO, and white wine vinegar. Add S&P. Shake and refrigerate. METHOD: Marinate chicken tenders in milk and egg mixture. In a plastic bag, crush corn flakes until completely smashed. Add salt, pepper, cayenne, and garlic powder to corn flakes. Dredge chicken in cornflake mixture and put on oiled cookie sheet. Drizzle EVOO over chicken. Bake at 375 for 20-25 minutes flipping midway through baking. (You may need to move to top rack or broil at the end to get extra crisp.)

This Fall Harvest salad has all of my favorite ingredients thrown together with a Cinnamon Pear Balsamic Vinaigrette. 1/2 C Grape Seed Oil or another flavorless oil 1/4 C Balsamic Vinegar 1-2 TB Maple Syrup 2-3 TB Juice from canned pears Dash of cinnamon S&P to taste I put this dressing over a plain pear for lunch today and I licked the plate clean!

Mixing up a basic salad to keep my dinner time fresh and interesting! Sliced Brussels sprouts Shaved Parmesan Prosciutto or Bacon, crumbled Chicken breast, sliced Caesar Dressing- 2 parts store bought Caesar Dressing 1 part fresh lemon juice 1 part EVOO S&P ETC. I never make Caesar dressing, so I find adding some lemon juice and olive oil make it taste homemade and less bottled. This works for other store bought dressings as well. Adding some vinegar or citrus and oil to dressings can make it taste fresher. Torn croutons would be fantastic on this too.

The other day I was eating string cheese and wheat thins for lunch with my kids when my husband sent over a picture of the most beautiful stacked salad he was having at lunch in Minneapolis. Today, I grabbed some ingredients from the salad bar at my local grocery store, turned on Giada while the girls were napping, and ate like a Queen! Having a food stacker is helpful for this but not necessary. (A food stacker looks like a giant round cookie cutter and can be found at any cooking store.) A measuring cup, cookie cutter, or can might work. I decided to stack a Cobb salad but feel free to use any ingredients you like! I shredded iceberg lettuce and added a little dressing to it. This homemade vinaigrette is a fridge staple at my house and I haven’t found a salad it does not taste good with. I get so spoiled with homemade dressings, I can’t stomach bottled dressings anymore. 1 C Canola or Grapeseed Oil 1/2 C Red Wine vinegar (I do more like 3/4 C) S&P 1/6 C sugar ( you can also use honey ) 1/3 C finely chopped purple onion Shake and refrigerate! You can double or triple this amount as well.

Pure Texas last night and oh my gosh! Loved the Fried chicken, corn, and biscuits but my takeaway was the salad dressing. It was a very simple salad which made the dressing really stand out. 2 TBS sugar 1 tsp salt 1/4 tsp fresh ground pepper 1/4 c apple cider vinegar 2 Tbs canola oil (or Grape Seed Oil) 1 head Iceberg lettuce Combine all ingredients in a jar and shake. Refrigerate. Tear iceberg lettuce in pieces and refrigerate. Dress salad and top with a lot of cracked black pepper. ETC. Another key is serving the salad on a cold bowl or plate.
