My favorite go-to breakfast during the week! I eat 1/2 bar before my workout with a lot of water and the rest after my workout. Quest bars have a ton of protein, almost no sugar, and they’re tasty!

Still dreaming about these kicked up grilled cheese sandwiches I served as appetizers last night. I wish there were leftovers because we will be doing takeout until Monday! Use your favorite thick sliced bread (I used a wheat seedy one that worked great). Butter both slices of bread and sprinkle seasoned salt on buttered side of one slice. Layer with: Fig jam Grated sharp cheddar cheese Carmelized Onions Very thinly sliced Granny Smith apple Cook on hot griddle and serve.

Pick your favorite- (Amounts will vary depending on number of serving and desired sweetness) Greek Yogurt Apples Granola Cinnamon Fresh nutmeg Brown Sugar Maple Syrup Trader Joes Pumpkin Spiced pumpkin seeds Mix cinnamon and fresh nutmeg in with your favorite kind of plain or vanilla greek yogurt. Set aside Chop apples into bite size pieces and sauté with brown sugar and Maple syrup. Let cool Layer cinnamon yogurt, apples, and granola until glass is full. Top with Trader Joes Pumpkin seeds and a drizzle of maple syrup. Enjoy!

Preheat your Traeger or oven to 350 degrees F. For the Buffalo sauce: Sauté butter, jalapeno, and garlic for about 2 minutes. Stir in the hot sauce, chicken broth, lime juice and bring to a simmer and reduce by 1/2. Season with salt and pepper. For the dry rub: Combine the smoked paprika, cayenne, onion salt, salt and pepper in a small bowl. Shred rotisserie chicken and sprinkle rub throughout the chicken. Add 1/2 of buffalo sauce to chicken. Let sit or put in oven to warm through. For the blue cheese topping: Add milk and 1/2 cup of the blue cheese in a sauce pan. Allow the cheese to melt into the milk, then transfer the mixture to a bowl along with the remaining blue cheese and the mayonnaise, sour cream, and green onion. To assemble: In a large roasting pan, spread out half of the pita chips in an even layer. There is no right and wrong with Chia Seed Pudding. Be creative and make it your own. Here are a couple of my favorites! Chia seeds Your favorite milk (almond or coconut) Your favorite yogurt Vanilla extract Maple syrup Salt Fall chia pudding- Canned Pumpkin, dash of cinnamon, dash of fresh nutmeg Toppings- be creative! You’ll want to use 1/4 cup chia seeds per every 1 cup of yogurt and 1 cup milk. I throw it all in and never measure it out so you really can’t go wrong. Add a dash of salt, a tsp of vanilla, and about 2 Tb or as much maple syrup as you like. For the pumpkin pudding add a dash of cinnamon and nutmeg, and 1 to 2 Tb of canned pumpkin. The pumpkin isn’t that sweet so I would also add more maple syrup. Cover and refrigerate mixture for a couple of hours or overnight. Add any toppings you like. Some of my favorites are pumpkin seeds, pomegranate seeds, raspberries, strawberries, blueberries, and coconut. The possibilities are endless!

Who else is ready to eat healthy after a weekend full of indulging? These protein poppers are a perfect before workout snack or a great substitute for dessert. I’m obsessed! 1 cup rolled oats 1 cup steel cut oats ⅓ cup coconut flakes 1 cup rice crispy cereal 1 cup nut butter, I used natural peanut butter 1 cup ground flax seed 2/3 cup chocolate chips, optional 3/4 cup raw honey 2 tsp vanilla 2 Tb coconut oil (optional) Any other add ins that you might like. Granola, butterscotch chips, almonds.. Be creative! INSTRUCTIONS In a large mixing bowl, mix all ingredients. Make sure it is mixed well so that you can form the balls easily. Add chocolate chips if using or other desired mix ins. Chill the mixture in the fridge for an hour so that balls will bind together. Roll the balls into about a 1 inch diameter and keep in freezer for on the go.

Yum! I just devoured this beautiful bowl of Blood orange chia seed pudding and Greek yogurt! Combine chia seeds and fresh squeezed blood orange juice. Let sit in refrigerator until most of the liquid is absorbed. Add honey if using plain Greek yogurt or as is if using vanilla Greek yogurt. Top with mint (YUM) and slices of blood orange.
