Who feels like cooking tonight? Not me, we’re doing takeout. If you’re home for the night preparing for Christmas, my favorite clean out the fridge/no hassle cooking is “fancy” scrambled eggs. I add leftovers, lunch meat, produce, whatever I can find to make it healthy, filling, and pretty darn tasty! I started with sautéing ham, leftover asparagus, tomatoes, fresh spinach, and green onions. I then added the eggs and topped with parmesan. Dinner and done!

Our Traeger was working overtime the last couple of days. It really the best thing that has happened to our kitchen this past year! The most unbelievable tender Brisket recipe TRAEGER recipe- cover brisket in a whole bottle of Famous Daves Rib Rub. Place brisket right on the grill grate for about 3 hours on 180 degrees. Take the brisket off and put in roasting pan covered with foil and put back on the grill at 225 for another 5 hours.

This homemade vinaigrette is a fridge staple at my house and I haven’t found a salad it does not taste good with. I get so spoiled with homemade dressings, I can’t stomach bottled dressings anymore. 1 C Canola or Grapeseed Oil 1/2 C Red Wine vinegar (I do more like 3/4 C) S&P 1/6 C sugar ( you can also use honey ) 1/3 C finely chopped purple onion Shake and refrigerate! You can double or triple this amount as well.

Tarte with Arugula Salad
This may not be the prettiest picture of food but it is one of the easiest and most delicious! I made it for an appetizer but I’ve also been known to devour one for dinner. Use Trader Joe’s (Maitre Pierre) Tarte D’Alace and top with arugula and parmesan tossed in EVOO, lemon juice, and S&P. Keeping it semi-homemade and delish!!

A new year calls for Vegetable soup to help keep all those New Years resolutions. I love this soup because it’s so healthy, versatile, and keeps in the freezer. I made a huge pot and plan to eat it for most lunches over the next couple of weeks and we just had it for dinner last night. Anything goes for this soup so don’t be exact, throw in any fresh ingredients you have around. Heat EVOO in a large pot. Add diced onions, garlic, and leeks- stir until softened Add carrots, celery, zucchini, and bagged cabbage- stir until cooked through Add fresh tomatoes and 3-4 cans of fire roasted diced tomatoes- continue cooking Add 2 cartons of your favorite stock and your favorite herbs. I added basil, thyme, bay leaf, garlic powder, onion salt, and s&p. Simmer for 2-3 hours My favorite part about this soup is the add-ins. Today we did kielbasa, parmesan, basil, and red pepper flakes. Other favorite add-ins are pasta, brown rice, chicken, beans, beef, anything goes! Keeping you healthy and happy in 2015.
