Grilled Dessert Pizza
Bribing my kids to NOT help in the kitchen. Grilled pizza dough -Pillsbury dough would work too- with butter instead of EVOO (stretch room temperature dough into desired shape and brush both sides with butter. Grill on high for 2-3 minutes then flip sides for 1 minute). You can also bake at 400 degrees for 8 minutes (one side). Layer with: Bananas Cinnamon sugar mixture Chocolate chips Powdered sugar Broil for 1 minute

When all else fails, stack it! When I’m at a loss of what to make for dinner, I start stacking things on top of toast. They end up being some of our favorite dinners (or breakfast/lunch). Whole wheat sourdough toast *Arugula Pesto Burratta cheese Prosciutto Avocado with a dash of lemon juice Grilled asparagus Fried or poached egg *Arugula Pesto In a blender combine: 1/2 cup walnut pieces or toasted pine nuts 1 garlic clove, minced 2 cups packed arugula leaves 1/2 cup Parmesan cheese Kosher salt After blended slowly add: 1 cup extra-virgin olive oil

National Pie day at our house! I’m in charge of dessert for a dinner this weekend. I started with the idea of Banana Cream Cheese Pie then decided I’d make a bunch of different mini pies with all different kinds of fruit. My base is cream cheese pie but you can add anything you want! My favorite is layered bananas coconut Dulce de Leche. Crust- Keebler Graham cracker crumbs (follow package directions) Mold into ramekins 1 (8 ounce) package cream cheese, at room temperature 1 (14 ounce) can sweetened condensed milk 1/2 cup fresh lemon juice 1 teaspoon vanilla extract Using a hand held electric mixer, cream the cream cheese until light and fluffy, about 3 to 5 minutes. Slowly add the milk mixing on low speed until well combined. Stir in the lemon juice and vanilla. Layer and top your mini pies with your favorite fruits. Refrigerate for 2 hours.

Not the healthiest breakfast we’ve ever had. I was experimenting for a get together tomorrow and these crunchy on the outside, chewy on the inside Churros did not disappoint 1 cup water 1/2 cup butter or margarine 1/4 teaspoon salt 1 cup all-purpose flour 3 eggs, beaten Vegetable oil, for frying 1/4 cup sugar 1/4 teaspoon ground cinnamon To make the churro dough: Combine 1 cup of water with the butter or margarine and the salt in a saucepan and bring to a boil over high heat. Using a wooden spoon, stir in flour. Reduce the heat to low and stir vigorously until the mixture forms a ball, about 1 minute. Remove the dough from the heat and, while stirring constantly, gradually beat the eggs into the dough. Heat about 2 inches of oil in a heavy, high-sided pot over medium-high heat until the oil reaches 360 degrees F. ( I just tested a little piece since I don’t have a thermometer). Read More...St. Pattys Corned Beef & Cabbage
It’s not too late to pull together a quick St. Patty’s Day dinner tonight. I have to admit, I don’t love corned beef and cabbage but this was an easy low stress way of preparing it. Cabbage- To ensure my kids would eat their veggies, I bought pre-prepared stir fry veggies from the grocery store deli section and added additional sliced cabbage. I loved the bell peppers, onions, and snow peas that jazzed up the normally boring cabbage. I added a little sesame oil, soy sauce glaze, and a dash of orange marmalade. Corned Beef- I brushed off as much of the spices as I could and slow cooked mine on our @traegergrills. Your BBQ or oven would work great as well. I added a BBQ sauce, Dijon mustard, apricot jam mixture (1/2 C of each) on top and let it cook for a couple of hours (covered). Following your package directions with this sauce would be great. I’m saving my real energy for Easter and spring recipes!
