Ushering in summer with this fast and delicious Peach and Blackberry Galette. This is so easy you could pull it together tonight! Store bought pie crust (of course I love TJ pie crust) I don’t roll it out at all. I lay it out and add fruit. Mix 3 cups of sliced peaches, nectarines, berries or your favorite fruit add… 1/2 C Sugar 1 lemon zested 1 lemon juiced 3 TB cornstarch Mix and let sit for a couple of hours (or not). Add fruit to center of the pie crust leaving a 1 inch border. Fold crust around fruit and brush with egg wash. Bake or Traeger (AMAZING) on 400 degrees for 15-20 minutes. I slightly under cook mine so it’s soft and not crunchy. Happy Memorial Day!!

Trader Joe’s Scallion Cakes
Have you tried these Trader Joe’s ( I can’t help myself) Scallion pancakes? They’re our new favorite after school snack! They’re 7 grams of fat and 160 calories and taste fried (is that a bad thing?) I sauté mine for a couple of minutes per side and top with Sweet Chili sauce!

Not getting up from this lounge all day today. I have to share two amazing smoothies I love here. I asked the bartender and they gave me the recipe! If you love something at a restaurant just ask, more then not they’ll tell you how to prepare it. The Lemon Cheesecake 1 Banana Lemon zest (1/2-1 lemon) 1/2 C Cashew nuts 8-10 Medjool dates 1 tsp Vanilla bean paste Dash of water Ice Pear Mint Smoothie Pear purée (or 1 can of pears with juice) Mint leaves, one bunch Mint syrup, 1-2 TB (depending on how minty you like it) Splash of apple juice Ice

My “Favorite Things” Party was all inspired by a Navy and Orange bag I saw in a catalogue a couple of months ago. Pick a date that will work best for your family and guests. Be very thoughtful around school events, community happenings, and sport programs in your area. Talk to friends to make sure you’re not forgetting about anything important. The biggest party planning mistake is scheduling your party on a very busy night for your friends. I find Thursday nights are the best for girlfriends and Saturday night for a couples or family party. Pick your guest list. It may be a small dinner party, a larger girls night, or family BBQ. Make sure that each family or guest knows at least 1-2 other guests. I often bring many different groups of friends together and as long as they know a couple of other people it will all run smoothly. Everyone DOES NOT need to know each other. I love bringing different sets of friends together. ** As nice as it would be, you can’t invite everyone. Period….

This meal has my name written all over it. I was going to share my party drink recipes but that will have to wait until tomorrow. Corn cake: 1 C corn meal 1/2 C flour 3/4 tsp baking soda 1 tsp salt 1 tsp pepper 1 tsp sugar 1 1/2 – 2 C milk 1 egg, beaten 1/4 C honey Green onion, sliced 1 1/2 C Frozen corn, thawed 1 C shredded cheese Jalapeño, diced Mix well and cook like a pancake. Top with leftover pulled pork or any meat (beef or chicken would be great). Top with fried or soft boiled egg. *For an amazing sweet corn cake, mix 2 parts mascarpone cheese to 1 part honey and smear (a lot) on corn cakes. OH MY GOSH!!
