Happy National Doughnut Day! These babies were the dessert at my party and everyone ate them up! Grill or Broil Glazed Doughnuts Fill the hole with custard (I bought some at a local bakery) or mascarpone cheese is good too. Drizzle on warm balsamic strawberry sauce and serve. Sauce- On a stovetop combine: 1 part Balsamic glaze 1 part brown sugar Lemon zest Dash of lemon juice Once sauce is combined, add strawberries and warm through.

I brought this salad to a birthday party last week and it’s perfect for a big crowd. Add or subtract your favorite toppings because anything goes. It would be perfect for the B-ball game tonight! Cheese Tortellini, cooked to package directions Pesto Jarred Red Peppers, thinly sliced Pepperchinis, sliced Olives ( your favorite Mediterranean ones) Artichoke quarters, in oil and drained Grape Tomatoes, halved Mozzarella, cut into chunks Provolone, cut into long strips Salami, quartered Pepperoni, cut into chunks Mix of Arugula and Romaine Favorite vinaigrette and balsamic for dressing. After you drain the tortellini, toss it with a big helping of pesto. Cut up each ingredient and sprinkle with S&P as you go. The key to variety in this salad is to have a lot of different shapes and sizes of your cheeses, meats, and veggies so don’t keep them completely uniform. I’m sure I’ve posted this before because it is a staple around our house especially on Sunday afternoons or when I’m not in the mood to make dinner. Sourdough bread, toasted Layer- Avocado Burrata or Mozzarella cheese Arugula Grilled Asparagus, cut into bite size pieces Shaved Parmesan Pistachios Dressing- lemon juice, garlic, and EVOO Soft Boiled Egg S&P ETC. Let’s talk about soft boiled eggs. I’ll never go back to hard boiled or fried for that matter. Toss eggs into boiling water for 6-7 minutes then dunk in cold water to stop cooking. They have a creamy rich texture and are good on their own or over anything you make! Don’t forget to add a healthy dash of kosher salt and ground pepper.

Life is not all Chili Dogs
Life is not all chili dogs. I often get asked how I am able to eat so much. It’s all about moderation. This is breakfast today. No carbs. Leave the muffins, croissants, and pastries unless they look amazing. I split the chili dog with my husband last night and probably only ate 1/4 of it. The 10th bite is not as good as the first. If I eat grilled doughnuts, I eat half of one and not three. I eat really well 90% of the time and leave that 10% for food that is worth it. Last night they served a cobbler that was pretty average for dessert so after one bite I put my fork on the floor (crazy lady) so I wouldn’t eat anymore. If it was amazing cobbler I would have eaten the whole bowl. Be picky about your splurges. And of course EXERCISE!! Six days a week no excuses. First thing every morning with very few exceptions.
