Brunch! I gain so much inspiration eating out and love remaking favorites at home. I was also so glad I subbed the toast for tomatoes. Sunny side up eggs Sautéed spinach with EVOO and garlic Tomatoes with basil and balsamic Avocado with EVOO and Black Sea salt ETC. The Black Sea salt made this simple breakfast. Flavored salts can add a great element to different dishes.

Torn Crouton Salad

This salad is all about the TORN CROUTONS! I promise they will change your life.  Our chef in NYC made this for us one night and I couldn’t wait to make it myself. Beets Loaf of savory bread, unsliced Plums Pecorino cheese, shaved Goat cheese, crumbled Arugula   Beets- Cut off greens and ends of beets. Cover whole beets in EVOO and spices and cover in aluminum foil and bake at 350 for 1 hour. Peel off skin and cut into bite size pieces. Toss in EVOO, red wine vinegar, thyme, S&P, and everyday seasoning (this will be your dressing so dress generously). Torn Croutons- Tear your favorite bread into bite size pieces. (Great Harvest Savory Loaf takes this up a notch). Generously drizzle EVOO and salt over bread and Traeger or bake at 350 until crisp. Toss after 5 minutes to brown all sides. Layer Arugula, beets (with leftover EVOO), plums, torn croutons, pecorino, and goat cheese. Mini Pretzel Snickers

I totally fall for all of the National Food Days! So, for national junk food day,  here you go! Mini pretzels Bite size snickers Peanut Butter Semi-Sweet Chocolate Chips Stack a mini snicker on one pretzel and put in a 300 degree oven to melt a little (not too much). Add a little peanut butter on second pretzel and top snicker with it. Let cool in fridge and dip half of pretzel in melted semi-sweet chocolate. Refrigerate until serving. Stick to one or two at the most and you’re golden. Give the rest to a neighbor or friend who needs some cheering up!

Mediterranean Frittata

I love the Spa menu at hotels. Full of flavor and healthy. This Mediterranean Frittata you can definitely make at home. Eggs Spinach Sun Dried Tomatoes, diced Red onion, sautéed Green olives, sliced Feta cheese Oregano Top with arugula salad and micro greens. Drizzle pesto and devour! ETC. Eat the 4 pieces of French toast your kids don’t eat.

Egg Scramble

When all else fails and your fridge is bare, eggs! Scrambled eggs with (anything you have left in the kitchen). Pesto Sun dried tomatoes Pepperoncini peppers Roasted Red Peppers Salami Pepperoni Artichokes Sauté all ingredients (except eggs, pesto, and basil) at a high temp. Put aside. Cook eggs in the same pan. Add toppings at the last minute of cooking including pesto, basil, and S&P.

Peach & Prosciutto Grilled Pizza

I could eat this whole pizza right now… Monday with all 4 kids . Deli prepared pizza dough (favorites are Whole Foods, Harmons, and TJ’s) Peaches Mozzarella Prosciutto Arugula Pistachios, chopped Parmesan shavings Balsamic glaze Basil Ground Pepper Leave your dough out at room temperature before you start stretching. Drizzle generouslywith EVOO and place directly on the grill or in oven (grill is much better). Layer on ingredients and serve!

Blackberry & Burrata Grilled Pizza

If you happen to have leftover pizza dough, this sweet yet savory pizza is perfect served alongside a large chicken salad or as an appetizer. Store-bought pizza dough, grilled BlackBerries Burrata cheese Basil Pine Nuts Ground Pepper Same pizza dough directions as yesterday’s post. Top with blackberries, Burrata, and pine nuts. Grill or broil for three minutes. Top with basil and cracked pepper.   ETC. Both yesterday’s and today’s pizzas can easily be made into salads. You can also serve the pizza dough with olive oil and salt on the side of a salad. I always make extra grilled pizza dough with no toppings to use for sandwiches, wraps or dessert pizzas later in the week

Shrimp n’ Cheesy Grits

I always thought this dish would be complicated to make. It took 15 minutes and was so delicious! Quick Cooking Grits Cheddar cheese, grated Parmesan or Pecorino cheese Grilled Corn on the Cob Raw Shrimp Garlic Salt Old Bay Seasoning Smoked Paprika EVOO Green onions Parsley Cook grits to package directions. In final minutes add a handful of cheddar cheese and Parmesan. Add a dash of garlic salt and ground pepper. Marinade shrimp in EVOO, Old Bay, Paprika, and S&P. Grill or sauté (don’t overcook). Cut grilled corn off the cob and add to grits with shrimp, green onions, and parsley.

Protein Poppers

Batches and batches of protein poppers at our house today. I’m addicted and so is everyone in my family, so we make a lot to keep in the freezer for easy popping! Combine, roll into 1 inch balls, and freeze. 1 C Old Fashioned Oats 1 C Steel Cut Oats 1 C Rice Crispy Cereal 1 C Nut Butter (I use natural peanut butter) 1 C ground flax seed 1/2 C Coconut flakes 2/3 C mini chocolate chips 3/4 C honey 1 tsp vanilla extract 2 TB coconut oil (optional)
