“Following a recipe is like playing scales, and cooking is Jazz.”
Shauna Niequist
Please excuse my very informal recipe writing and “jazz” like instructions. I love to be creative in the kitchen and never follow recipes. I’ve done my best, while locking myself in the bathroom (for that 2 minutes of silence during the day), to give you my best guess and ideas on ingredients and directions.
As Thomas Keller of The French Laundry has been known to say, make a recipe once according to the instructions. The second time, rewrite the recipe in your own way, adjusting for your own taste, cutting out or adding steps according to what makes sense to you. The third time, Keller says, make it without any recipe at all. And at that point, the recipe is yours!
