Chicken Pot Pie Gallette

My favorite take on Chicken Pot Pie, a savory Galette! Store bought pie crust Rotisserie Chicken, shredded Onion, diced Garlic Bag of Frozen corn, green bean, carrots and peas Mushrooms, sliced Chicken stock Flour Parsley S&P, or favorite seasoning Sauté onions, mushrooms, and frozen veggies in EVOO. Add 3 TB of flour until cooked through. Add shredded chicken. Add chicken stock as needed to moisten mixture. (For this you don’t want it as moist as a pot pie or it will run). Add your favorite seasonings. Put mixture in the middle of crust and fold crust around. Cook at 425 for 30 minutes or until golden brown (I like mine a little underdone). Coconut Cashew Chicken

Because I do plan on making dinner sometime this week (and aren’t these the most helpful for you?). This Coconut Cashew Chicken was so good and so easy! My kids said its their favorite chicken. Chicken breasts Coconut covered Cashews (Costco or Trader Joes) That’s it! I ground the nuts in my blender and covered the chicken in them. (I didn’t use any egg or flour but I’m sure you could). We grilled them on our #traeger but your oven or BBQ would be fine too. Trader Joes frozen Brown rice and frozen veggies are my go-to’s lately for a quick and healthy dinner.

Roast Chicken Dinner

Winner winner chicken dinner! This meal is so easy and looks like it took all day. Ingredients: Roasting chicken EVOO Garlic, minced Seasoning (chicken rub, seasoned salt, etc.) Mirepoix mix (pre chopped carrot, celery, and onion) Brussels sprouts, chopped in half Beef stock Condensed Portobello mushroom soup   Method: Clean and rinse off chicken and rub with EVOO and garlic. Generously shake your favorite seasoning over entire chicken. Put chicken in roasting pan and drop in veggies and Brussels sprouts and a little more EVOO and (a little) beef stock. Bake or Traeger at 400-425 for 70 minutes. Done!! For gravy, take chicken and veggies off roasting pan and put on platter. Add beef stock to drippings and deglaze pan. Once reduced by 1/3 add portobello mushroom soup (Trader Joes) and continue to cook through. This gravy is rich and adds amazing depth to this chicken.

Chicken Sliders on Sweet Potato Waffle Fries

Football is right around the corner!! Try these delicious and easy Chicken Burger Sliders on Sweet Potato Waffle Fries! Buy Sweet potato waffle fries and bake according to package directions. Chicken burger- 1 1/12 lb Ground chicken 1/2 onion, grated 1/4 C Parsley, chopped finely 2 tsp Garlic salt Ground Pepper Combine chicken mixture until combined. Form into small sliders and grill or Traeger for just a couple of minutes on each side. Layer chicken burger, dill pickle, tomato, and avocado on each waffle fry and top with one more. Serve with Ketchup and mustard.

Chicken Pot Pie

My parents are taking off for the airport and I thought this was the perfect goodbye meal. This chicken pot pie is amazingly easy and you probably have all the ingredients in your freezer! Start with Evoo, chopped garlic, and diced onions in a large sauté pan. I added a mirapeux mixture and fresh mushrooms I had as well. Sauté until soft then add around 3 spoonfuls of flour until the flour dissolves and is mixed in with other ingredients (Wondra works great as well). Add any frozen veggies you like. I used a green bean, carrot, and pea mixture and added frozen corn as well. Stir and sprinkle with garlic salt and pepper or any seasonings you like until cooked through. Add around 1/2-3/4 of a carton of chicken broth and let simmer until it starts to thicken. A rotisserie chicken works great in this or any type of shredded chicken breast you like. Add chicken and continue simmering. (This mixture is great on rice or as a low carb lunch so make extra!) My favorite pie crusts are…

Bruschetta Chicken Salad with Brie Croutons

Dinner last night was based on having Brie cheese that needed to be put to use before it went bad. It’s also a salad take on one of my favorite dips (that I’ve posted before). I raided the kitchen and was pretty happy with the end result! Mix of butter lettuce and arugula Sliced leftover grilled chicken beast Instead of dressing I made a bruschetta topping of tomatoes, garlic, green onion, EVOO, balsamic glaze, and s&p. Sourdough Brie cheese “croutons”. Broil your favorite bread with sliced brie cheese. Top with kosher salt and cut into squares. Top with julienned basil, more balsamic glaze, and toasted pine nuts.

Baked Fried Chicken

This “Fried Chicken” is finger lickin’ good and not bad for your waist line! My husband and I ate boneless skinless chicken breasts and the kids love the drumsticks and thighs or “chicken bones” as my 7 year old likes to call them. Marinate chicken (your favorite kind) in buttermilk and a dash of hot sauce for an hour. I add 2 eggs directly to the buttermilk mixture and mix it around to coat the chicken. Meanwhile in a large plastic bag add 1/2 corn flakes and 1/2 potato chips (I used reduced fat kettle chips). Crush until you achieve your desired consistency. Add seasoned salt and pepper to dry mix but remember your potato chips are salty too. Dredge chicken in cornflake mixture until coated on both sides. Lay on greased cookie sheet. Add a dash of cayenne on top of the chicken for those who like it hot. Drizzle a little EVOO on top of each piece of chicken which will help crisp the top. Bake at 400 degrees for ? Chicken and Corn lettuce wraps

Light and refreshing lettuce wraps for lunch or dinner. Who wants to be slaving behind a hot stove? Butter lettuce cups Cojita cream- 1 part Cojita cheese to 2 parts sour cream Grilled chicken or rotisserie chicken, cut up (I put the TJ grilled chicken strips on the BBQ for 2 min) Grilled corn Radishes, thinly sliced Cilantro, roughly chopped Squeeze of lime juice Assemble and EAT! ETC. Use steak, shrimp or fish instead of chicken Use feta cream (from earlier post) instead of Cojita Add avocado and tomatoes Put in a tortilla or on a tostada Assemble on a Tortilla chip without the chicken for an appetizer.
