Soft Boiled Egg Salad with Avocado Toast Eggs Light Mayo Dijon Mustard Chives, chopped Avocado Lemon juice Sriracha Salt Pepper Crusty bread Boil eggs for 6-7 minutes. Take out and put in cold water. Mix a little mayo and mustard with chives and S&P. (Because the eggs are soft you don’t need much mayo and mustard). Chop eggs and add mayo mixture. Slice bread and top with avocado, a big squeeze of lemon juice, and S&P. Top avocado with eggs and top with chives and more S&P.

Breakfast Pizza for Dinner ❤️ Wheat Pizza Dough Cheddar cheese Soft Scrambled Eggs Kielbasa or Chicken sausage, sautéed at high heat Tomatoes, sautéed Green onions, chopped and sautéed Red Jalapeño, chopped and sautéed Goat cheese Arugula Stretch room temperature dough and drizzle with EVOO. Bake at 425 until just turning brown. Take out of oven and top with cheddar cheese, scrambled eggs, chicken sausage, green onions, tomatoes, peppers, and goat cheese. Bake for 8-10 more minutes. Top with arugula. Use anything you have in your kitchen for this pizza, this is just what I had on hand.

My kind of meal (except for the part where I sliced my finger open) 😖 Bread bowl (any kind) Eggs Prosciutto, or sausage, ham, bacon Onion, chopped Bell pepper, chopped Spinach Tomato Cheddar cheese Parmesan cheese Hollow out bread bowl. Drizzle EVOO and S&P and bake at 375 for 10 minutes or until crispy. Sauté onions, meat, and bell peppers. Add tomato and spinach. Add eggs and more S&P and cook until soft. Fill bread bowl with cooked egg mixture and top with both cheeses. Cook at high temp (425 ish) for 10-15 minutes.

Leftovers that make you go hmmmm BRISKET HASH Shredded potatoes (bagged) Leftover Brisket (or chicken, pork, turkey) Leftover Broccolini with Shallots (any greens) Poached eggs Salsa Guacamole Jalapeños ETC. For crispy hash browns you have to use oil on your pan or griddle. Spray won’t do the trick. More oil=more crisp. Leave the hash browns down for at least 10 minutes and press them down but don’t check on them. Season with seasoned salt and pepper. Once ready to flip, re-oil the pan to get the other side crispy. Season salt second side and leave for another 10-15 minutes. It will take longer then you’d think.

Ciabatta bread Fried egg Steak, cooked medium and sliced (you could use chicken or pork instead) Avocado, smashed Arugula Chimichurri sauce Citrus Chimichurri – 1 part lime juice 1 part fresh orange juice Garlic, chopped Green onion, sliced Cilantro, chopped Parsley, chopped 2 parts EVOO Mix all ingredients and let sit for at least one hour. I’ve been chowing on this En Croute I made for @studio5ksl today. It’s my mom’s recipe and my favorite holiday brunch item. 2 eggs 1 TB Mustard 2 tsp lemon juice 1 pkg frozen chopped spinach, thawed and well drained 4 hard-cooked eggs, chopped 1 cup chopped ham 1 C shredded Swiss cheese 1 sheet puff pastry In large bowl, beat 2 eggs well. Set aside 2 t. Blend in mustard and lemon juice. Stir in remaining ingredients until well combined. On lightly floured surface, roll puff pastry into a 15 x 9 inch rectangle. Brush lightly with some of the reserved beaten eggs. Spoon egg/spinach mixture down center of pastry. Fold both sides over to cover. Pinch to seal edges and ends of pastry. Place seam side down on lightly greased baking sheet. Brush top and sides with remaining beaten eggs. Cut 5 diagonal slashes in top. Bake at 425 until golden brown, about 20 minutes.

Did any of you see my easy Croque Madam on Fox? It’s perfect for breakfast, lunch, or dinner! INGREDIENTS: Prepared hollandaise sauce (Trader Joes) Gruyere or Swiss cheese, grated Brioche or Challah bread, toasted Ham, thinly sliced Eggs S&P METHOD: Preheat oven to 450 degrees. Cook poached or sunny side up eggs. Set aside. Place toast on a work surface and spread each piece with sauce. Cover sauce with cheese, a slice of ham. Top each sandwich with another piece of toast. Spread each sandwich with more sauce and sprinkle evenly with remaining grated cheese. Place sandwiches on prepared baking sheet, and bake until heated through, about 5 minutes. Add fried or poached egg on top of sandwich. Transfer baking sheet to broiler and broil until golden brown and bubbly. ETC. Making eggs for a crowd? Cook eggs (slightly undercooked) and put on cookie sheet. Before serving warm through and serve.

Breakfast for dinner is never a bad idea especially with this maple candied bacon crisped on the Traeger! Make your favorite waffles (my family loves Kodiak Cake’s Power cakes that are whole wheat with extra protein). Add bacon and an egg on top with kosher salt, ground pepper, and a lot of maple syrup. Serve with a fruit salad so you don’t feel so guilty. Maple candied bacon- buy extra thick cut bacon (a must). Throw the strips in a bowl with maple syrup and brown sugar and toss until all coated. Lay out on a rack over a cookie sheet and then grind pepper and cayenne pepper if you like spice with your sweet (you do). Grill or bake at 400 until you get it as crispy as you like. You may want to broil the bacon at the end if you like it extra crispy. Finally, a word of WARNING. My daughter was inhaling the bacon on her way to dance last night and started choking. These are great for breakfast, lunch, or dinner and are great leftovers. Spray muffin tins very well with non stick spray. I used store bought pre-shredded hash browns and filled muffin tins 2/3 full making room in middle for filling and pushing potatoes up the sides of tin to make cup. Bake or Traeger at 400-425 for about 30 minutes or until crispy and golden brown. I filled my cups with leftover pulled pork and an egg. When I baked the egg on top it got pretty messy but still tasted great. If you’re making these for guests I would suggest cooking the egg separately and putting on top. Garnish with green onion and Sriracha. *You can use anything you want in these cups..ham, turkey, cheese, scrambled eggs. Whatever you have in your fridge!
