Using them with this French toast was genius if I do say so myself! 😊 INGREDIENTS: Brioche bread, sliced Cinnamon Almonds, ground Egg Almond milk Dash of vanilla Cinnamon Dash of salt Maple Syrup METHOD: Cut thick slices of bread and soak in egg mixture (eggs, milk, cinnamon, vanilla, and salt). My latest obsession is all things French toast. Buy your favorite loaf cake (think banana nut, carrot cake..) dip in French toast mixture (eggs, milk, cinnamon, vanilla) and put on a griddle. You may have to finish it off in the oven depending on how thick you cut the slices, I like them thick. For cream cheese syrup mix- pure maple syrup and warmed cream cheese.

Happy Sunday! Pumpkin crunchy French toast with Buttermilk syrup: Use Texas toast or thickly sliced French bread. Make usual French toast mixture of eggs, vanilla, cinnamon, and milk. Add a can of pumpkin pie mix. Crush corn flakes and dip bread in egg mixture and then coat in corn flakes. Make sure to butter your griddle. Buttermilk syrup: 1/2 cup butter 1/2 cup buttermilk 1 cup sugar 1 tsp vanilla 1 tsp baking soda Mix first 3 ingredients until mixed together then add vanilla and baking soda.

Yum and YUM! I always have all kinds of nuts and coconut in my freezer. For this French toast, I combined toasted slivered almonds and coconut in my blender for 30 seconds or so. You don’t want a paste but you want it fine enough that it coats the bread. Prepare French toast as normal. Cut bread into strips and dip in egg mixture and then coconut almond mixture. Spray griddle well. You may have to sauté 3-4 sides of sticks or you can have your oven preheated to 400 and stick them in for 5 minutes at the end. I like sticking them in the oven so the family can all eat at one time. This worked well with uncut bread as well but my kids loved the sticks.

Anyone that knows me well has had my Baked French Toast. It’s comfort food on steroids and I’ve never met anyone who doesn’t come back for seconds. 2 loaves cinnamon bread 12 eggs 4-5 C milk 3/4 C Brown Sugar Cinnamon Vanilla Salt Tear loaves of cinnamon bread, challah bread, or any bread you have on hand into pieces. (Great Harvest Cinnamon Chip bread is the best.) Spray casserole dish liberally with cooking spray and add bread. In a mixing bowl stir eggs and milk (depending on how rich you want your casserole use 2%-half and half). Add cinnamon, vanilla, brown sugar and a dash of salt. Combine liquid and pour over bread making sure all bread is covered with liquid. Push down to soak all pieces. Cover and keep in refrigerator overnight. The next day bake at 350 for 1 hour or until cooked through. (Once in awhile the middle won’t cook fully and I stick it in the microwave for 5 minutes and it finishes it off. En route to the Middle East today and thought I’d leave you with this parting recipe. Pass it along to your family for Mothers Day! Store bought pound cake, unsliced (I also used poppyseed so use your favorite). Egg milk cinnamon vanilla (use your normal egg mixture you use for French toast) Whipped cream Lemon Curd Fruit for topping Maple syrup Cut thick slices of pound cake and dip in egg mixture until soaked. Put on griddle for 2-3 minutes on each side or until cooked through. Add lemon curd to whipped cream (1-2 TB per 2 C of whipped cream). Smear plate with lemon curd, plate French toast and top with berries, whip cream, and maple syrup!
