I may not be cooking much this week, but I wanted to share a favorite summer dinner with you. Stack- Tostada shell or charred tortilla Guacamole Grilled corn Black beans Cole Slaw (red peppers, jalapeño, cilantro, with 1 part lime juice to 1 part EVOO, dash of Sriracha and S&P) Cilantro Grilled shrimp (cover shrimp in Sweet Chili sauce and grill) or Seared Ahi Tuna chunks Lime juice and zest Cojita Cheese Top with Trader Joes Partially Popped Popcorn ETC. No need to run to the store, stack anything you have on hand! Leftover chicken or fish would be great too. Use all ingredients the next day plus lettuce for a salad. Use TJ frozen corn. Add all ingredients (except slaw) to guacamole and serve with chips. Make extra shrimp or tuna and slaw and serve over brown rice for dinner the next night.

Speaking tonight to women about healthy eating tips and tricks. Here are a couple of my notes. What are some of your favorite tips? 1. Self discipline – Healthy, in-shape people are rarely lucky. They work very hard and say no to unhealthy food more often then yes. Sacrifice, willpower, and hard work. 2. Change your mindset about the type of eater you are. (Tell yourself, I never buy chicken nuggets or hamburgers at a drive through. I don’t eat white bread. I am a healthy eater. I exercise six days a week) 3. Make splurges worth it- Don’t think of foods as off limits. Indulge on only the very best things. 4. Weight loss is 75% diet and 25% exercise. You are what you eat. 5. Low carb (less pasta, white breads ) Load up on lean proteins and vegetables (chicken, pork, all veggies) 6. Remove temptation- Don’t keep unhealthy food at home. (Throw away candy, 2 bites of dessert then fork on the floor, say no to the bread bowl) 7. Emotional eating – Monitor when and why…

A drizzly day calls for biscuits and healthier version of sausage gravy. Half the biscuit and add extra spinach for an even healthier take. Biscuits, halved Eggs, scrambled Tomatoes Avocado Sautéed spinach (sauté EVOO, garlic, S&P. Pull off the heat as soon as it starts to wilt) Sausage gravy 1 package Applegate Chicken Sausage 2 TB flour 2%milk, as needed for thickness Ground Pepper Garlic salt Dash of nutmeg Crumble sausage (break into little pieces don’t cut) and sauté until golden. Sprinkle flour over sausage until cooked through. Add one cup of milk until combined and then 1-2 more. Let thicken for 10 minutes. Add more milk if needed. Add salt, pepper, and nutmeg. ETC. Under cook the eggs just a bit so they don’t get rubbery. Take away the biscuit and this would be a great breakfast scramble.

This salad is all about the TORN CROUTONS! I promise they will change your life. Our chef in NYC made this for us one night and I couldn’t wait to make it myself. Beets Loaf of savory bread, unsliced Plums Pecorino cheese, shaved Goat cheese, crumbled Arugula Beets- Cut off greens and ends of beets. Cover whole beets in EVOO and spices and cover in aluminum foil and bake at 350 for 1 hour. Peel off skin and cut into bite size pieces. Toss in EVOO, red wine vinegar, thyme, S&P, and everyday seasoning (this will be your dressing so dress generously). Torn Croutons- Tear your favorite bread into bite size pieces. (Great Harvest Savory Loaf takes this up a notch). Generously drizzle EVOO and salt over bread and Traeger or bake at 350 until crisp. Toss after 5 minutes to brown all sides. Layer Arugula, beets (with leftover EVOO), plums, torn croutons, pecorino, and goat cheese. ETC. Torn croutons can go on any salad and would be especially good with tomatoes, mozzarella and basil! I love the Spa menu at hotels. Full of flavor and healthy. This Mediterranean Frittata you can definitely make at home. Eggs Spinach Sun Dried Tomatoes, diced Red onion, sautéed Green olives, sliced Feta cheese Oregano Top with arugula salad and micro greens. Drizzle pesto and devour! ETC. Eat the 4 pieces of French toast your kids don’t eat.

Pesto Sun dried tomatoes Pepperoncini peppers Roasted Red Peppers Salami Pepperoni Artichokes Sauté all ingredients (except eggs, pesto, and basil) at a high temp. Put aside. Cook eggs in the same pan. Add toppings at the last minute of cooking including pesto, basil, and S&P.

Combine, roll into 1 inch balls, and freeze. 1 C Old Fashioned Oats 1 C Steel Cut Oats 1 C Rice Crispy Cereal 1 C Nut Butter (I use natural peanut butter) 1 C ground flax seed 1/2 C Coconut flakes 2/3 C mini chocolate chips 3/4 C honey 1 tsp vanilla extract 2 TB coconut oil (optional)

Excited to collab with Sambazon and their amazing Acai Smoothie Packs! This Acai pie is the perfect healthy dessert or fun dish for any occasion. My cooking class went CRAZY over it! Store bought Graham Cracker Crust Sambazon Acai Smoothie Packs Frozen berries Bananas Almond milk Granola Prepare two smoothie packs according to package directions (add almond milk, berries, and banana). Layer half of smoothie over graham cracker crust. Layer banana, berries, and granola. Repeat with one more layer of smoothie and toppings. Freeze and bring out one hour before serving! ETC. You can find Sambazon smoothie packs at Whole Foods, Sprouts, and some Costcos.
