Pick your favorite- (Amounts will vary depending on number of serving and desired sweetness) Greek Yogurt Apples Granola Cinnamon Fresh nutmeg Brown Sugar Maple Syrup Trader Joes Pumpkin Spiced pumpkin seeds Mix cinnamon and fresh nutmeg in with your favorite kind of plain or vanilla greek yogurt. Set aside Chop apples into bite size pieces and sauté with brown sugar and Maple syrup. Let cool Layer cinnamon yogurt, apples, and granola until glass is full. Top with Trader Joes Pumpkin seeds and a drizzle of maple syrup. Enjoy!

I walked around the house last night mumbling to myself, “oh my gosh, I love those carrots, those carrots are so good, wow those carrots were amazing”. So here you go. Trader Joes has these great multi colored carrots, don’t miss them! I peeled and cut the carrots in half and boiled until al dente (can you say that with carrots? You don’t want them mushy). Run them under cold water to stop the cooking process once they’re done. Meanwhile, boil maple syrup and sage leaves until reduced by 1/2. Set aside and take out sage leaves. Mix together equal parts (1 tsp-ish) cumin, brown sugar, coriander, salt, and chili powder. In a large cast iron skillet heat butter and EVOO until bubbling. Add 1/2 of carrots and 1/2 of herb mixture to the pan. Only flip once so you get a nice crust on carrots. Add second half of carrots and rest of herb mixture. Plate carrots and top with sage maple syrup and juice and zest of one lime. Trust me these are worth the extra effort.

Maple Bacon wrapped Scallops for 200 was not a problem at my annual Christmas Soiree last night. Our Traeger Chef nailed it with these beauties! Ingredients: 12 Jumbo Sea Scallops 1/2 Cup Salted Butter 1/2 tsp Crushed Garlic 12 Thick Cut Maple Bacon Slices Fresh Ground Pepper Cayenne Pepper Smoked Paprika Preparation: Take scallops out, pat dry with paper towel and place in a large mixing bowel. In medium sauce pan melt the salted butter and bring to a boil then add crushed garlic. Bring sauce to a simmer and stir continuously for 1-2 minutes. Remove from heat and let cool. While sauce is cooling, lay bacon strips out on a cookie sheet and generously grind black pepper over the bacon. Once the sauce has cooled pour over the scallops in the mixing bowl and lightly stir. (be careful not to break the scallops) Remove scallops one at a time wrapping the bacon around the edge of the scallop, securing it with a tooth pick.
