I came up with this snack in bed this morning and ate a couple by 10:00 AM because I couldn’t wait to try. I’m going to use it as the base to Carne Asada tacos tonight but I think they’re Devine all by themselves. The best part- Cumin citrus salt 1 part sea salt 1 part Cumin 1/2 part chili pepper flakes 1/2 part or less lemon zest Toast or blister corn tortillas Add smashed avocado and feta cheese. Top with cumin citrus salt and a squeeze of lemon juice. I’m excited to add Carne Asada to them tonight (if there are any left).

Taco salads call for homemade (EASY) baked tortilla chips. They’re crunchy on the corners, a little chewy in the center, and can be flavored any way you want! My favorite- Mission-Artisan Style Tortillas- Corn and Whole Wheat Blend With a pizza cutter cut into triangles. Spray cookie sheet with Coconut oil spray and spray tortillas. Season with your favorite salt. I love to add Tajin or even a little lime juice or zest. Bake at a very high temp or broil for a few minutes and then turn over and re-season and broil other side.

I just served this Chilaquiles dish to a group of friends and we devoured it! It’s a little time consuming but worth it! I’m thinking an Easter party or your next get together. Don’t wait until Cinco de Mayo! CLIFF NOTES (because this is a long recipe). Make a red chili sauce (time consuming, you could substitute canned red enchilada sauce.. but I wouldn’t it’s the best part). Drench tortilla chips or tostada pieces in red sauce and layer in a casserole dish with cheese and pulled pork (optional). Garnish with all the extra yummies! This recipe will make a 9 by 11 worth of Chilaquiles. I doubled the recipe to make 2. I added 4 pounds of pulled pork from a local BBQ shop which I think added a lot to the dish.
