I’m excited about these leftovers today! The Tahoe Brunch casserole is delicious but has a whopping 46g of fat per serving. With this lightened up version you can feel better about serving this to your family. Original Recipe- 12 slices white bread, crusts removed 2-3 tbsp. butter, softened 1/2 c. butter 1/2 lb. fresh mushrooms, sliced 2 c. thinly sliced yellow onions 1 1/2 lb. mild Italian sausage 1 lb. cheddar cheese, grated 5 eggs 2 1/2 c. milk 1 tsp. dry mustard 1 tsp. nutmeg 2 tbsp. fresh parsley 2 C tomatoes, diced Butter bread with softened butter; set aside. In a 10-12 inch skillet melt 1/2 cup butter and brown mushrooms and onions until tender. Season to taste with salt and pepper. Set aside. Cook sausage and cut into bite size pieces. In greased shallow casserole layer 1/2 bread then mushroom mixture, sausage, and then cheese. Repeat ending with cheese. Overnight oats are a family breakfast favorite but lately I’ll do a big scoop with a little peanut butter, 1/2 banana, coconut, dash of cinnamon and mini dark chocolate chips for dessert. It’s the perfect healthy substitute for ice cream and can curb any sweet tooth! I normally dump a couple cups of oats, 1/2 C of chia seeds, almond milk, a big scoop of Greek yogurt and a dash of maple syrup but if you really like measurements (this is for one serving, but trust me you’ll want to make enough to share). Mix and refrigerate overnight- 1/3 C Old Fashioned Oats 1/3 C almond/coconut milk 1/3 C Plain Greek yogurt 2 TB Chia Seeds Small dash of vanilla Dash of Maple Syrup Dash of salt ETC. Add berries, peaches, or sliced almonds. Top with bananas and brown sugar and broil to caramelize. Top with granola or dried fruit. Swirl PB and Nutella and warm it emoji . I’m all about easy no-cook cooking in the summer. Stack your favorite foods together and you can’t go wrong. And, this bacon! Wheat sourdough bread Arugula and Spinach Peach slices Candied Bacon (4th of July post and the best thing I’ve ever eaten) Blue Cheese Crumbles ETC. What’s so great is that we all have different talents and get to share them with the people we love. Now, onto Root Beer Float Pops Fill your Popsicle mold 1/3 full of melted vanilla ice cream. Freeze for a couple of hours. After ice cream freezes, fill with Root Beer and top with one more scoop of ice cream. Freeze overnight! ETC. Use your favorite soda or juice and your favorite ice cream or sorbet. Mix and match! My favorite Popsicle mold is the Norpro Ice Pop Maker sold on Amazon

Running around like crazy getting ready for a big wedding today and this wrap hits the spot! Whole Wheat Lavash Wrap Trader Joes Beet Hummus Turkey slices Carrot sticks Persian cucumbers Tomatoes Feta or Mozzarella cheese S&P ETC. Use whole wheat pita or tortilla. Lettuce wrap would be great too. Keep it vegetarian with no turkey and add sprouts. Make it a salad with no wrap and extra lettuce.

I can’t wait to share this Family Rib recipe with you! My Dad is a master griller and he is known across the country for his famous ribs and even more famous sauce. 1.Costco Baby Back Ribs are the best. 2.Season Salt and Pepper both sides of ribs 3.Bake or Traeger on a cookie sheet covered tightly with aluminum foil at 325 for 3-4 hours until almost falling off the bone. 4.Take off the heat and let cool. 5.Cut into individual pieces and cover the entire rib in store bought BBQ sauce like Sweet Baby Rays. 6. Turn BBQ or Traeger on high and sear ribs until crisp on the outside and tender falling off the bone inside. 7. Brush on your favorite BBQ glaze and serve! ETC. The only recipe I will never share is my Dad’s BBQ glaze recipe. There is nothing that compares and people will come from far away just to get one lick of it. I may not be cooking much this week, but I wanted to share a favorite summer dinner with you. Stack- Tostada shell or charred tortilla Guacamole Grilled corn Black beans Cole Slaw (red peppers, jalapeño, cilantro, with 1 part lime juice to 1 part EVOO, dash of Sriracha and S&P) Cilantro Grilled shrimp (cover shrimp in Sweet Chili sauce and grill) or Seared Ahi Tuna chunks Lime juice and zest Cojita Cheese Top with Trader Joes Partially Popped Popcorn ETC. No need to run to the store, stack anything you have on hand! Leftover chicken or fish would be great too. Use all ingredients the next day plus lettuce for a salad. Use TJ frozen corn. Add all ingredients (except slaw) to guacamole and serve with chips. Make extra shrimp or tuna and slaw and serve over brown rice for dinner the next night.

This slider was served as an app last night and it blew me away. I love burgers stacked high but the simplicity of this burger can’t be beat. Use the highest quality of ingredients you can find since there are so few. Brioche bun, toasted (a brioche bun is a must) Ground hamburger Blue cheese crumbles Spicy pickle, sliced *Lemon Aioli S&P Bacon (optional), Red pepper flakes (optional) Toast bun and set aside. Combine aioli and let sit in fridge for 1-2 hours Combine blue cheese crumbles, red pepper flakes, and S&P into your ground meat, form small patties, and grill or Traeger. (Don’t overcook!) Spread aioli on bun and top with burger and bacon. Insert toothpick and spicy pickle on top. Lemon Aioli 3/4 cup mayonnaise 2 garlic cloves, minced 1 lemon, zested 1 lemon, juiced S&P ETC. Sliders are perfect because they’re small and you can indulge on one and add a huge green salad! Grilled salads are a summertime staple at our house. The best thing about them is that you can grill anything and everything, no rules! Cover all veggies in EVOO and S&P. Grill or Traeger on high for 10 minutes or until browned. Portobello Mushrooms Corn on the Cob Asparagus Yellow Squash Zucchini Purple Onion Red and Orange Peppers Chop vegetables once cooled. (Let vegetables cool on a paper towel to soak up water). Add fresh tomatoes, goat cheese, and julienned basil. Drizzle more EVOO, balsamic glaze and S&P. ETC. You’ll want to make a lot. You can eat it with anything! Pasta, chicken, pork, over rice, or with eggs. This can also be done roasting in your oven.
