This is my new favorite salmon recipe, hands down! It’s a spin on a salmon that I’ve seen Giada do. Healthy, citrusy, and amazingly delicious! Salsa: 2 large oranges 1/4 C EVOO 1/4 C Fresh lemon juice 1/2 C Chopped fresh flat-leaf parsley 2 scallions, finely sliced 3 TB chopped fresh mint leaves 2 TB capers, rinsed and drained 2 TB orange zest 1 tsp lemon zest 1 tsp crushed red pepper flakes Kosher salt and freshly ground black pepper METHOD: Combine all salsa ingredients. For oranges, cut off skin and cut into segments between each membrane. For salmon, coat in olive oil and salt and pepper. Leave out until room temperature and BBQ or #traeger on a high heat until crisp on outside and medium rare inside. (You can also bake or sear salmon.)

Sunday mornings are for pancakes, PJ’s, and family. We’re hunkering down for a great day of #ldsconf and these pancakes! Caramelized Apple Pancakes INGREDIENTS: Kodiak Cakes Power Cakes mix Pecan Pumpkin instant oatmeal, Trader Joes Apples, sliced Butter or butter spray Honey or brown sugar Kosher salt Pumpkin Spice Granola, Trader Joes Maple syrup METHOD: For every 2 cups of prepared pancake mix add one packet of pumpkin oatmeal and mix. Cook pancakes as usual. Cut apple into very thin slices. Sauté with a little butter or butter flavored spray on medium heat. As they start to soften, add honey or brown sugar (or a little of both). How much depends on how sweet you want your apples. I didn’t do too much just enough to coat. When apples are Caramelized take off heat and add a dash of salt. Top pancakes with apples, granola, and maple syrup!

Happy first day of October. This Pumpkin Lasagna is a favorite fall dish at our house. It’s even better the next day. Ingredients: One box Oven Ready lasagna noodles 2 15 oz cans Pumpkin Puree 2 C Ricotta Cheese 1/2 TB Cinnamon 1/4 tsp Vanilla 1 egg 1 large Sweet Yellow Onion (finely chopped) 1 TB garlic 1 tube Jimmy Dean Sage Sausage 2 C Mozzarella 2 C Parmesan Basil BÉCHAMELSAUCE Jarred White or Vodka Sauce Dash of Fresh Nutmeg 3/4 C Parmesan S&P Method: Heat 1 TB EVOO in a medium pot over medium heat. Add the onion and sauté until translucent, 6 to 7 minutes. Add the garlic and cook until fragrant, 2 more minutes. Add the sausage and cook until brown, breaking it up. Combine Pumpkin Puree, Egg, Ricotta Cheese, cinnamon, and vanilla. In a medium sauce pan combine all Béchamel ingredients and warm through. Build your lasagna in a 9-by-13-inch baking dish: Start with a layer of Béchamel sauce, then top with a layer of noodles. Baked Granola Apples
Happy first day of fall! My house smells so good right now! 🍁 BAKED APPLES Apple, cored Granola Brown sugar Cinnamon Nutmeg Butter Orange, zested Maple Syrup Dash of salt Core Apple and fill with granola, cinnamon, nutmeg, a little brown sugar and top with a little butter and orange zest. Fill dish with water and cook filled apples for 20 minutes covered with aluminum and 25-30 minutes uncovered at 375. Once cooked, drizzle maple syrup, orange zest and a dash of salt. Serve with nonfat Greek yogurt, ice cream, or on its own.

Fall menu for dinner tonight. Our last batch of pears are perfection but I made them even better. Pear Blue cheese or Gorgonzola Dried cranberries or cherries Pecans, chopped Maple syrup Cut pear in half and scoop out large whole. (A teaspoon works great for this) Mix cheese, dried fruit, and nuts together and stuff pear. Bake or #traeger in a pan with some apple juice at the bottom. 375 for 20 minutes or until pear is soft, cheese is melted, and nuts are toasted. Drizzle with maple syrup.

My sister made us the most delicious salad today at her new home. Her grilled shrimp were amazing! Skewer raw shrimp Sprinkle with Tajin Grill for 3 minutes on each side and baste with- Butter Tajin Garlic powder Cayenne pepper Black pepper Brush remaining butter sauce on shrimp after grilling. ETC. My favorite part of the salad besides the grilled veggies and feta was the brown rice she added right on the salad. So good!
