Goat Cheese, Mango, and Steak Salad

Steak, Goat cheese, and Mango Salad One of my goals on here is to help you become more comfortable with inviting friends to “life at your table”. Wether it’s a diet coke and peanuts during a play date or neighbors over for dinner, invite someone over. I promise it will be worth the effort! This salad can be done ahead of time and looks fancier then it is. Red leaf and butter lettuce Avocado, sliced Asparagus, roasted and chopped Mango relish- Store bought pineapple salsa with fresh mango and cilantro (tastes homemade) Grilled shrimp, steak, or chicken Goat cheese log Macadamia nuts, chopped or ground in blender Asian Soy dressing- combine 1/2 C EVOO 2 Limes, juiced 1/3 C Red wine vinegar 2-3 TB Soy sauce 1 TB garlic 2 green onions, chopped Dash of sugar Dash of Sesame oil Ground pepper Macadamia Goat cheese patty – Squish goat cheese into disk shape. Cheese Filled Meatballs with Creamy Polenta

I will never eat noodles with meatballs again. This meal is like a dream come true and I’ve eaten it three nights in a row as proof. POLENTA Traditional Italian Polenta (pre-cooked polenta in the log form found at most grocery stores) Milk 1/2-3/4 C Parmesan cheese S&P TOMATO SAUCE 28 oz canned tomatoes 1-2 TB sugar 1 TB Italian spices 1 jar tomato sauce MEATBALL 2 lb extra lean ground beef (96% lean) 3/4 C crumbled Caramelized onion cheddar cheese (Trader Joes) 1/2 Yellow onion, grated with zester 2 TB garlic 3 slices wheat bread, soaked in milk and crumbled 2 TB Worcestershire sauce 2 TB Italian spices (basil, oregano) S&P Heat polenta in sauce pan and add milk as needed to thin out. Add Parmesan until melted through and S&P. Heat canned tomatoes, sugar, and spices and reduce by half. Add jarred tomato sauce and continue to warm through. Smoked Salmon Tartine

I’m staring at piles of laundry so of course I decide to make myself lunch instead! Loved it so much it’ll be dinner too. Baguette, sliced down the center Plain cream cheese or mayo (yes, add just a little) Smoked salmon, fresh salmon, leftover salmon. Any and all work. Arugula or spinach with lemon juice and EVOO Peas Top with a little more lemon juice and generous dash of salt and ground pepper.

Southern Peach Cobbler

My amazing friend @eloiseandme shared her delicious Southern Peach Cobbler with me and said I could pass it along to you! She is a talented mama of 2 little girls and I just love her! Thanks @eloiseandme. “This one turned out just as I imagined, sweet but not too sweet, hint of cinnamon, buttery, doughy- but still perfectly crisp on top.” Peach Base 8 fresh peaches – peeled and sliced into thick wedges 2 tablespoons white sugar 1/4 cup brown sugar 1/4 teaspoon cinnamon 1/8 teaspoon nutmeg 1 teaspoon fresh lemon juice 2 1/2 teaspoons cornstarch Topping 2 cups flour 1/2 cup brown sugar 1/4 cup white sugar 2 teaspoons baking powder 1 teaspoon salt 12 tablespoons butter, cut into small pieces 1/2 cup boiling water Directions -Preheat oven to 425 1. In large bowl, combine peaches, sugars, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly. Bake in 2qt baking dish for 10 min. 2. Citrus Ceviche

Last night’s ceviche was perfection. Here is my ceviche recipe with an added idea from last night, grapefruit and orange segments! My ceviche is cooked so you don’t have to worry about raw shrimp and scallops. 1 lb. Sea Scallops 1 lb. Shrimp Juice from: 1 lime, 1 lemon, and 1 orange Zest from 1 lime 1 tsp. Garlic Powder 1 tsp. Onion Powder 2 tsp. Salt ½ tsp Pepper 1 Avocado, diced ½ Red Onion, minced 1 Tbsp. Cilantro, chopped Pinch of Crushed Red Pepper 1 Tbsp. Canola Oil Grapefruit segments Orange segments In a bowl combine the shrimp, scallops and canola oil. When ready to cook, arrange the shrimp and scallops on the grill, Traeger, or broiler for just a few minutes. (Under cook, don’t over cook) Prepare all the other ingredients, and place in a large mixing bowl. Let scallops and shrimp cool, then cut in half width-wise, and combine them with the ingredients in the bowl. Refrigerate Ceviche for at least 2-3 hours to let the flavors combine. Banana and Granola Pancakes

Do you ever put granola in your pancakes? Or do you ever put coconut ice cream in your maple syrup? You should! Pour prepared pancake mix on griddle. Add banana slices and granola. Flip. The bananas will caramelize and it’ll toast the granola. Top with more granola and pineapple chunks. Melt ice cream, mix with maple syrup and try not to eat 5!
