Tuna Salad with Avocado and Cucumber

The best tuna salad you’ll ever eat! I don’t make tuna nearly enough but when I do, I go big and I keep it healthy. 4 cans White albacore tuna, drained Light mayo, 1Tb Dijon mustard, 1-2 TB Lemon juice and zest, 1 lemon Avocado, smashed Dill pickles, chopped Cucumber, chopped Purple onion, chopped Pickled jalapeño, chopped Relish, 1/4 C S&P (Sriracha salt ) Combine all ingredients and refrigerate overnight. ETC. I hate draining tuna, so I toss all tuna into a strainer and push out the liquid that way instead of each individual can. emoji I actually made 8 cans of tuna this week so these measurements are a rough idea. emojiI love adding a big spoonful to lettuce cups, in a wrap, or on top of toasted wheat bread. Take out any ingredient you don’t like or add something you do. You can never have enough lemon juice or zest in your tuna salad! I crumbled the TJ French onion cheese on top which was a delicious way to add just a little bit of flavor.

Grilled Cheese with fig jam and caramelized onion

Still dreaming about these kicked up grilled cheese sandwiches I served as appetizers last night. I wish there were leftovers because we will be doing takeout until Monday! Use your favorite thick sliced bread (I used a wheat seedy one that worked great). Butter both slices of bread and sprinkle seasoned salt on buttered side of one slice. Layer with: Fig jam Grated sharp cheddar cheese Carmelized Onions Very thinly sliced Granny Smith apple Cook on hot griddle and serve.

Apple, Ham, and Onion Grilled Cheese

This grilled cheese is called grab everything you can think of in your kitchen (not much from being gone) and throw it in a sandwich. The result was the BEST grilled cheese I’ve ever had! Layer: Buttered sourdough bread Pepper Jack cheese Sliced Black Forest ham Sautéed onions (sauté EVOO and sliced onions for 20 minutes until brown and soft) Thinly sliced apples Goat cheese Roasted Pineapple Habanero sauce (Get it now at Costco! Very spicy very delicious.) Buttered sourdough Heaven!!

French Dip

With all this rainy weather, a warm French Dip sandwich seemed perfect for dinner. With leftover caramelized onions and mushrooms, it made it that much easier. This was super easy and fairly healthy comfort food that the whole family loved. Baguette, sliced in half Roast Beef, thickly cut from your deli 2 yellow onions 2 containers mushrooms (TJ’s frozen sautéed mushrooms are great for this) EVOO 2 TB butter 1 carton Beef stock 1 TB Thyme Bay Leaf Gruyere cheese (if you have any cheese rinds in your freezer, add it) S&P This is a very simple version of Au jus so if you want more gourmet, you can find some more complex ones online. Sauté chopped onions for 20-30 minutes with EVOO on a low heat. Add butter and mushrooms and sauté until reduced. Add thyme, bay leaf, and beef stock. If you have Gruyere cheese, add the rind and half the block. Simmer for 3 hours or so. Top baguette with Roast Beef and onion and mushrooms. Serve with a cup of juice and grating of Gruyere cheese…

Bacon Lettuce and Peach Sandwich

I’m all about easy no-cook cooking in the summer. Stack your favorite foods together and you can’t go wrong. And, this bacon! Wheat sourdough bread Arugula and Spinach Peach slices Candied Bacon (4th of July post and the best thing I’ve ever eaten) Blue Cheese Crumbles ETC. Use any bacon and throw it under the broiler with brown sugar and cayenne. Use tomatoes, avocado and turkey. Add balsamic glaze or use goat cheese.

Turkey and Beet Hummus Wrap

Running around like crazy getting ready for a big wedding today and this wrap hits the spot! Whole Wheat Lavash Wrap Trader Joes Beet Hummus Turkey slices Carrot sticks Persian cucumbers Tomatoes Feta or Mozzarella cheese S&P ETC. Use whole wheat pita or tortilla. Lettuce wrap would be great too. Keep it vegetarian with no turkey and add sprouts. Make it a salad with no wrap and extra lettuce.
