My sister made us the most delicious salad today at her new home. Her grilled shrimp were amazing! Skewer raw shrimp Sprinkle with Tajin Grill for 3 minutes on each side and baste with- Butter Tajin Garlic powder Cayenne pepper Black pepper Brush remaining butter sauce on shrimp after grilling. ETC. My favorite part of the salad besides the grilled veggies and feta was the brown rice she added right on the salad. So good!

Steak, Goat cheese, and Mango Salad One of my goals on here is to help you become more comfortable with inviting friends to “life at your table”. Wether it’s a diet coke and peanuts during a play date or neighbors over for dinner, invite someone over. I promise it will be worth the effort! This salad can be done ahead of time and looks fancier then it is. Red leaf and butter lettuce Avocado, sliced Asparagus, roasted and chopped Mango relish- Store bought pineapple salsa with fresh mango and cilantro (tastes homemade) Grilled shrimp, steak, or chicken Goat cheese log Macadamia nuts, chopped or ground in blender Asian Soy dressing- combine 1/2 C EVOO 2 Limes, juiced 1/3 C Red wine vinegar 2-3 TB Soy sauce 1 TB garlic 2 green onions, chopped Dash of sugar Dash of Sesame oil Ground pepper Macadamia Goat cheese patty – Squish goat cheese into disk shape. Last night’s ceviche was perfection. Here is my ceviche recipe with an added idea from last night, grapefruit and orange segments! My ceviche is cooked so you don’t have to worry about raw shrimp and scallops. 1 lb. Sea Scallops 1 lb. Shrimp Juice from: 1 lime, 1 lemon, and 1 orange Zest from 1 lime 1 tsp. Garlic Powder 1 tsp. Onion Powder 2 tsp. Salt ½ tsp Pepper 1 Avocado, diced ½ Red Onion, minced 1 Tbsp. Cilantro, chopped Pinch of Crushed Red Pepper 1 Tbsp. Canola Oil Grapefruit segments Orange segments In a bowl combine the shrimp, scallops and canola oil. When ready to cook, arrange the shrimp and scallops on the grill, Traeger, or broiler for just a few minutes. (Under cook, don’t over cook) Prepare all the other ingredients, and place in a large mixing bowl. Let scallops and shrimp cool, then cut in half width-wise, and combine them with the ingredients in the bowl. Refrigerate Ceviche for at least 2-3 hours to let the flavors combine. | INGREDIENTS | 2 lbs jumbo shrimp, peeled [leave tails on] and deveined 1/2 cup freshly squeezed lime or lemon juice 1 1/2 teaspoons Cajun Rub 1 cup plain [greek] yogurt 1/4 cup heavy cream, half and half, or milk 1/2 of a small onion, coarsely chopped 3 cloves garlic coarsely chopped 1 1″ piece of fresh ginger peeled and coarsely chopped 2 teaspoons chili powder 1 1/2 teaspoons ground cumin 1 teaspoon ground coriander 1/2 teaspoon ground turmeric a few drops of red and orange food coloring [optional] 4 tablespoons butter melted thinly sliced red onions lime wedges sprigs of cilantro for serving | DIRECTIONS | Put the shrimp in a large resealable plastic bag. Combine the lime juice and Cajun Rub. Pour over the shrimp and refrigerate for 15 minutes. In the meantime, combine the yogurt, cream, onion, garlic, ginger, chili powder, cumin, coriander, and turmeric in an blender jar and process until the mixture is fairly smooth. I always thought this dish would be complicated to make. It took 15 minutes and was so delicious! Quick Cooking Grits Cheddar cheese, grated Parmesan or Pecorino cheese Grilled Corn on the Cob Raw Shrimp Garlic Salt Old Bay Seasoning Smoked Paprika EVOO Green onions Parsley Cook grits to package directions. In final minutes add a handful of cheddar cheese and Parmesan. Add a dash of garlic salt and ground pepper. Marinade shrimp in EVOO, Old Bay, Paprika, and S&P. Grill or sauté (don’t overcook). Cut grilled corn off the cob and add to grits with shrimp, green onions, and parsley.

Seafood Gumbo is a labor of love. It was delicious and had amazing flavors but you may want to save it for a special occasion or when you’re feeding a large crowd. Below is the recipe I “kind of” followed.
